A Pondering Mind

A little of this. A little of that.

Mitch Hedberg Quote

“You know that Pepperidge Farm bread, that stuff is fancy. That stuff is wrapped twice. You open it, and then still ain’t open. That’s why I don’t buy it, I don’t need another step between me and toast.”

  1. Most bread from commercial bakeries uses a process called “The Chorleywood process”. Look it up.

The process involves large amounts of yeast, sugar and salt. This can cause bloating in humans. Usually blamed on wheat, leading to a mis-diagnosis of wheat intolerance. Because people do no make their own bread, as much as they should. Consequently, the wheat is blamed. Because when commercial bread is cut out of diet, the bloating subsides.

Now my brother-in-law and his children are celiacs. So, I have a little understanding of how gluten intolerance can affect people. That Pepperidge Farms stuff is likely made long before selling and kept frozen, with plenty of preservatives? It requires double wrapping to maintain its spongey texture.

Do yourselves a favour people! Learn to make bread the old-fashioned way. It’s a comfortable process and once learned will give the maker a great deal of satisfaction, from stepping out of their comfort zone. Use of a bread maker can help especially, if one only uses the dough cycle. To be baked in the oven and not in the maker’s pan. Cheers Jamie http://hirundine.com
